This dust build up can restrict the flow of hot fumes to the vent. As heat builds the dust can ignite causing a fire in the ducting.

Laundry ducting in care homes can often be overlooked. This type of ducting (along with kitchen ducting) is a potential fire risk due to the build up of dry and flammable dust.

Removal of this dust ensures a consistent air flow, lower fire risk (compliance with H&S) and better quality of internal air.

KITCHEN EXTRACTION FAN
The images here show the kitchen extraction fan from a tea room. We clean this for them every six months.

This build up is typical for a cafe that is cooking 6 days per week and it is normal for a food venue to have their fans cleaned every 6 months depending on the type of food that is prepared.
Your extraction system should have a gas interlock system which works in conjunction with your fan as a safety precaution. If an extraction unit is not cleaned and maintained then the fan could fail at the worst possible time for the business: during the busiest hour on the busiest day! If the fan fails then your gas automatically shuts down too.

This is another reason why it is so important to have your kitchen fans cleaned regularly.
